Mother's Day Fixings

Kitchen knives don't have much flex. Fillet knives do. Here is a kitchen knife a 8 3/4" carver I made from a 2 man crosscut saw blade of 01 steel. The saw was purchased by my Grandfather who used it to clear his farm land in the 1930's. I gave it a full flat grind and it has good flex with a handle of purple heart wood. It's the spine difference I wanted to show. These features make for a good carver / slicer. DM

By now I have ground down about .015" from the sides of this Empress 9" blade. It slices very nice and penetrates well. I think I'll leave it at this level and use it. The shoulder of the flats have a softer look. DM

Great. Do you use olive oil to saute your morels? Any spices dashed on them? Those are highly sought after in Spring, this time of year. Do
they taste like most mushrooms? Are they firm when harvested to withstand some handling / packing them to the vehicle? DM

Sauté in butter. There is no way to describe the taste. When fresh, like these, very firm. This is a great year around here for them. If you had to buy them around $60 a pound.
 
Our mothers have passed, so we did not celebrate. But, we wished many of our friends who are mothers a Happy Mother's Day.

David, that looks like quite a feast. It makes my mouth water just to see the pictures.
 
Doc, yes, ours too are no longer with us and we remember them. But we have aunts and others that are motherly figures to us. These we call
or send a card to at this time. I hoped it would inspire some to undertake the effort at a family gathering. Some members did post pictures of
their table fare at Thanksgiving & Christmas. The next up coming holiday, is Memorial Day. Which is close to my wife's birthday. So, I plan on doing the other half of that brisket, the point cut for this occasion. After this is July 4th and I have no plan for that date yet. But among our
replacement layers is a misjudged pullet. A rooster. And my money is on him to be crowing of a morning by then. When that happens my wife
will inform me about his morning racket and it is time for him to go. So, this is in my plans toward that date. Here he is, second from the left. These are Austarlorp. DM

canvasbk, I have not seen morels here. Except in health food stores for $$. So, it is a gourmet cuisine. Good to know. DM
 
Ha. Once they figure out how to crow, they just keep doing it. He'll be 3 months old by the end of this month. I'll see how much he weighs and
know if that's going to be enough for 4 persons. I may let him grow another month.? I plan on using the Empress 6" boning knife. It works great for cutting up a whole chicken. DM
 
Thanks Hawk. It was! I haven't been seeing any watermelons in our local fields. This one came from Mexico. DM
 
My wife has been wanting an air fryer. Went all out and got her a nice one that is pretty large and you can cook a whole chicken in. Figure it will be a healthier way to cook okra and squash in since that is about all I have luck growing. Now, the month long ritual begins where I start dropping hints on knives that I like :)

Hey David how are the chicken's coming this year. Have you used any of your Bucks on them.
 
Hawk, this month I plan on putting 11 in the freezer. One is a rooster. A mistake as we bought pullets to replace our played out layers and he was in the bunch. He'll be 4 months old at the end of this month. He's a good size now and my wife is getting uneasy about all
his crowing. The other 10 are old layers that are passed a good production layer. These will be processed all the same except the bags
marked for dog food. We'll still get some value for caring for them.
I'm thinking on using my screwed together 110 on some as soon as it arrives. In line after that is the 6" boning Empress Trio kitchen knife. Thanks for asking. DM
 
We will be looking forward to your butchering pictures with you Buck lives.
Is that the June Buck of the month 110?
