I'm reposting this Japanese style prep knife. It's my take on a Mukimono style and I love it as a kitchen slicer. I ground the blade with a right hand bias. It features a 70/30 asymmetrical grind with the back being full flat ground to the spine. The front is hollow ground with one of Nathan Carother's 36" radius platens. I tried to capture this feature in the 3rd picture. It's subtle to the eye but not to touch. I took the edge down to approx. 0.009" and then sharpened a micro "V" bevel with DMT stones.
The handle is a mix of Macassar Ebony and Mango with a front ferrule of Corian.
OAL: 9.5"
Blade: 4" front side hollow is finished with 400 grit cork belt and the backside is 600 grit hand sanded.
Steel: 3/32" CPM154 CM HT by Peter's to RC60
Handle: 5" in Macassar Ebony and Mango with white Corian ferrule
Heel height 1.5"
