Murray Carter hand forged Blue Steel (aogami) kitchen knife, 6-3/4" blade; this is from his SFGZ series, aogami carbon steel core heat treated to RC64, forge welded between 305 stainless steel sides. Combines the best qualities of both carbon and stainless. Hammer marks are clearly visible on the blade surface. In Carter's terminology he calls this a 5.6 sun wabocho. Murray's knives are famous for their "scary sharp" edges that most people have not experienced before. Can you pushcut paper with your knife, slice onions thin enough to read newsprint through?

This knife is hand made by Murray. The hammer marks, balance, blade thickness, blade shape of each knife he makes is unique, no 2 are exactly alike. I have dipped the handle in Walnut Danish oil to increase water repellence. $175 shipped, please PT or email if interested, thanks!
