IF YOU SEND A KNIFE TO MURRAY FOR SHARPENING
ask specifically that Murray do the work. He's been letting his apprentice make sheaths and sharpen and the kid's not worth a shit. I learned the hard way.
 
I doubt that, honestly. Murray Carter's wife is the one that makes the sheaths, I've received two from her and they've been both fantastic. If you have a problem with the work, as well, Mr. Carter would have no problem correcting it. I have plenty (read: too many) of Carter knives, and they've all been the best knives I've ever received, fit and finish. I don't think that Murray Carter would send out a product that he himself didn't approve of, either. IF this were the case.

How did you learn the hard way? Please elaborate?
 
I watched Murray sharpen some large Japanese Carbon steel kitchen knives at the Blade show. He held a large stone in one hand and a knife in the other. I couldn't believe how close he was working to his thumb and finger tips. He probably could do this with his eyes closed . I would have to spit out my gum and stop talking. He was stroking and fielding questions and looking all around. Practice pays. Nice guy.
 
In demonstrations he sharpens on cheap King stones but he says in his video he uses power tools for the real work. He has this huge water-cooled grinding wheel.
 
Although, he specifically says that he does not encourage the use of power tools to sharpen a blade since they will heat up the edge and change the composition of the tempering. He uses a motorized water wheel to do a lot of his sharpening, and then, he says, that he finishes all of his knives by hand on his waterstones. I think in one of his YouTube videos here (watch this video! it's amazing) you can see him actually use the water wheel and create the primary and secondary edges. Essentially the system he uses is the same as if you were creating a blade with only a waterstone, though...
 
I just had him sharpen and re grind the secondary edge on a busse SAR 5 and am very impressed. I may have him set up other blades too.
