Must all knives be razor sharp?

Unlike most folks here, I don't really need to keep my knives "hair popping" sharp.
In fact, I don't even sharpen them that often--only when they need it.
Besides, the only difference between a really sharp knife and a razor-sharp knife is about three slices.
