My guess on the wood would be maple too. But maple thats been torched and dyed/stained with leather dye. Doubt it's ironwood. I work a lot with ironwood. Not seeing it here.
 
I bet when your dad bought it, the knife was just called “a hunting knife “

How thick is the blade? Great piece knowing it belonged to your dad.
