I'm really enjoying the sway back jack pattern, but would love to see it with some sort of upgraded modern super steel. I think cpm-m4 would fit the bill nicely as it would keep somewhat with tradition since it is a carbon tool steel but features powdered metal technology and performance that puts it head hand shoulders ahead of anything seen on production traditional and truthfully tops just about everything out there today in terms of edge holding without being overly difficult to sharpen (about the same as s30v in my experience) I am really liking my cv/chestnut sbj, but one in cayenne bone and cpm-m4 would be the bee's knees... I'd easily fork over a large chunk of change for a classy traditional pattern with modern super steel. (modern knives featuring m4 typically run $150+, so a price point of under $200 would be a good target. I know I'd snatch one up in a hurry.
