Posting my most used kitchen knife. Been using this AB for about 3 years now. Extremely comfortable in hand, great weight and balance, cuts with ease. Just a beautifully executed knife. Only had to sharpen once so far. Amazing!!!

I do have a regular set of chefs knives but I reach for this AB most often. I’ll use the chefs when needed.

Otherwise, whatever is in my pocket will usually end up as a paring knife. It's fun to have a bit of variety.
 
A 4” Wusthof Chef’s knife, with the full size handle, has replaced my 4” paring knives for most kitchen work. A 7” Old Hickory butcher knife usually handles the rest. These two can do it all, and are fun; the 4” is handy and the 7” is historical.


My avatar shows one sandwich I made with a GEC #15, sheep’s foot blade. That did do it all, during a friendly one month challenge. “Pick one knife for everything.” Kitchen, mail, and household tasks. No serious outdoor work that month, and things worked out well. Lots of washing and care to keep the blade clean and ready.
 
The Jantz VG-10 blades are pretty good and I did a few of them many years ago as well! Mom has most of them now.
 
I picked up a 5” utility knife from Edge Knifeworks. It’s pretty much replaced all my smallish knives.
