My favorite knife sharpeners

There are a lot of good systems and benchstone out there. Pick one and practice. I am fond of the Spyderco Sharpmaker and ceramic benchstones butthere are many other great systems out there.
Something to remember; a sharp knife is a sharp knife no mater how it was sharpened.

When I show a knife, the conversation usually turns toward the edge. It’s interesting, how many people view knife sharpening as a mystery. I would hazard a guess, most knives in the world are dull.

Out church puts on a weekly soup / sandwich / desert lunch. We serve av. of 150 in two hours.
Several years ago as a noob, I took it upon myself to sharpen the myriad of knives in the kitchen. (the sandwiches look like they were cut with a hacksaw, or torn in half)
I was set upon by the lead lady, who let me know ”How dangerous sharp knives are!”
Choose your battles.
 
I used to have a Lansky system it worked great my ex-wife now owns it. I'm probably just going to get another one of them. I used to sharpen my hunting knives with it and it was an excellent sharpening system.

Did you explain to her that a Dull Knife is more dangerous
 
I gifted an idahone V sharpener and was able to try it a bit, I thought it was a good system for those that don't/can't use stones and a much better option then pull through devices. Not as versatile as a Sharpmaker but more practical imo.

I still think KME is the overall best bang for the buck out there. Add a good strop of some kind to the kit, and it's really all you will ever need. I have a lot more, but I'm also more into this than a normal person :)
 
Funny, I have put 4 Sharpmakers with Idahone and Congress Moldmaster stones, and 1 Worksharp Ken Onion Edition electric in the hands of others as it fit their unique needs best as novice sharpeners. But 1 Worksharp Precision Adjust went to grandkids, on the strength of OEM value and after market support, while a set of inexpensive artifical stones are going to young adults who grew up with Sharpmakers and KME for xmas.
After finding a Northern European Slide Based sword/knife sharpener out of Canada, I began playing with putting a slide on our KME using KME's magnetic Axe tool on a slide. But now I am cleaning and refitting an inexpensive Toohr 3, which is a modified Chinese made SJ-Multi-Grinder, after an intro by SJ-Multi-Grinder inventor/team leader, Hans Plag. Han's stated copies were OK by him as long as they did not say copies were made in Germany (if Google's Youtube machine translation is to be believed). Also, for me, watching two of his kids, new to sharpener/sharpening, getting sharp edges using the stone holder slide was impressive!

The best sharpener, as the guys above have stated, is patience.

…Last week I visited my uncle, he had a cheap $2 stone, and he said that the quality of the stone is bad so he can't sharpen anything. I took the stone, sharpened all his knives to paper slicing sharp. He was too stunned to speak.
It’s a poor workman who blames his tools;)
