My favorite is one of my 2 everyday carry knives. It's a Hartsfield keychain dagger. It's 1/16" thick with a 3 1/2" blade. It cuts beautifully. (It also makes it easy to reach my keys.)
 
I carry a Randall Model 10 with a 3" ss blade and Micarta scales. It is a real workhorse, not nearly as beautiful as some of the knives here. I really like the WD Peace knives shown here. Can someone provide info on how to get in contact with him?
