there is nothing whatsoever wrong with the grind on the knife pictured
just try the same design out of wood strip to experiment a little with where /how high you are comfortable grinding ,yea a 10 wheel you could go all up to the top

Nice work! I hollow grind 90% of the knives I make. It's easier than flat grinding to me.
