Unrolled it looks like elk. Rolled up they remind me more of chrome tanned bullhide or bison.
I'm used to seeing more deep wrinkles with bison, but am not an expert.
Bullhide I don't think I've seen much if at all.

It's a nice looking hide either way, and would make a great vest or jacket.
 
When I was a kid 13/14 ish. I found a piece of very similar leather along side the road. We’re driving along and I saw it on the shoulder and made my mom turn around and go check it out. This was where Hwy 41 and 46 come together, where James Dean was killed. Sure as heck a piece of leather on the shoulder. A friend and I did make a vest out of it.. used a hammer and nail to punch holes for stitching.

Hate stitching on elk these days. Very in consistent temper, makes it hard to sew well.

I was recently looking at a vintage half belt jacket in elk from Jansha Tanning co on eBay, a beautiful jacket in a gorgeous hide but they apparently didn't use elk very much and that may explain why.
They also did more tanning than manufacturing though too, so I'm sure that's another part of it.
