Oh, that was a hard decision. I finally decided to take the Kou and the Shin in DLC coated YXR7 steel and honzukuri grind (convex on both sides). HRc is somewhere around 65. Yes. The sharpness is scary :eek: These are definitely not knives to play around with. Use it with purpose or keep it closed :cool:
