I got an RC3 from a trade on this forum not too long ago and haven't used it yet. I decided to put it to used in the kitchen today and I was pretty happy with it. The handle stays in my hand when soaking wet and it dries VERY quickly. This is a great knife.

I have never tried a dry rub, I usually bake them in sauce then sear on the grill. Looks delicious.

That's the way I've always done it until yesterday. Yesterday was a first time for me cooking them on the grill from beginning to end. When I start them in the oven they get much more tender, but IMHO they taste better cooked on the grill because I can use a lot of smoke.

I've got a ways to go before I consider ribs perfected on the grill though. I've got to figure out a way to get them a little more tender on the grill. I like the meat falling off the bone.
 
Yum. I had ribs yesterday and I cook them in the oven first then finish them on the grill. Tasty!
 
you have some way of steaming the ribs as you grill? can of water in the grill maybe?
 
As to cooking method, we liberally sprinkle and pat down with Stubbs spice rub. Bake for a long time, then grill to get a nice crust. Serve wih homemade mac 'n cheese.
 
Whatever happened to Ole Bosyphilis? I saw him and Willie a lot back in the early 80s but I never hear anything about him now?
 
looks like a nice dinner...even though i don't particularly enjoy ribs...too much work for me.

you could try boiling them for a while before adding spice and fire...that usually does it for us.
 
If your grill has 2 burners one for each side try cutting 1 off and placing the meat on the other side and cook slowly with indirect heat with just the dry rub the apply the sauce and put over direct heat for the finish.

I had a foil tray with a bit of water in the grill down by the coals, but I think it was either to far away from the heat source or the heat was not high enough. The water did not evaporate at all.

I've been looking to see a show of his for some time now, but he only really performs in FL. I made a trip to Myrtle Beach to go see David Allan Coe and that was a long trip...

I'd love to see Ole Hank though.
