Naikiri 169 S-grind Saya
The Nakiri knife is ideal for tasks such as chopping, slicing and dicing all kinds of vegetables, from leafy greens to tougher types such as carrots or potatoes. Its wide blade also makes it easy to pick up chopped vegetables and move them to another location.The knife has a special “hollow” cut, which gives it less resistance when slicing and thus greater cutting power. The main advantage is that the sliced food sticks much less to the blade than with conventional wedge-cut knives.
The blade is made of Swedish AEB-L stainless steel with a high hardness of 60-61 HRC. With such a high hardness, the blade has an excellent and durable edge, but the knife must not be used to cut into bones or frozen food, as this risks damaging the blade.
The knife comes with a custom-made Saya oak wood sheath. Saya is a traditional Japanese wooden cover that protects the knife blade and ensures safety during storage and transport.
The knife requires no special care, just wash with water and wipe dry after use. Sharpening the knife is best on water stones, please feel free to contact me if needed.
