This Nakiri is available now.
52100 carbon steel at HRC 63 by Peters.
Thin convex grind for ease of slicing and a bit of release too.
The handle is of Ironwood and Manzanita burl, with a thick copper spacer. A fusion of western and octagon shaping for an off-beat but traditional look. Finished with a natural beeswax and food grade mineral oil (cutting board cream) for ease of maintenance and long life.
*the lines that appear in the blade are just my knotty pine ceiling being reflected...
Asking $245.00 plus shipping.
