This full tang nakiri is hand-ground from Aldo's 52100.
It has been through 3 normalizing cycles, then austenitized and quenched.
The choil has been rounded for increased comfort.
The bevel is belt finished at 400 grit while the handle, tang, spine, and choil are all hand finished to 1000.
The bevel has a slight convex behind the edge to reduce food stickage.
The edge was taken to 6000 on a water stone and stropped.
The handle consists of stabilized cocobolo with brass pins all shaped in an octagonal grip.
