Hi all,
Today I am offering my very first Nakiri! It is ready to work! I hope you like it!
I heat treat and temper my steel in my digitally controlled Evenheat Knife Oven, with a formula designed to achieve a Rockwell of 60. I have been using AEB-L for many years and it is one of my favorite and best performing steels.
Specifications:
Purpose - cutting vegetables, fish and meat
Steel - AEBL stainless
Thickness - 3/32”
Overall length - 13”
Width - 2”
Cutting edge - 6 1/4”
Blade length - 7 1/4” top tip to handle
Grind - flat
Finish - belt satin
Handle - blue / pewter G-10
Liners - blue G-10
Pin(s) - light grey G-10
