I'm a lawyer, though not licensed in California (see asterisk caveat at bottom), but the statute you are referring to has to do with knucks in the traditional sense and the statutory definition under § 21810 is as follows, "metal objects worn on a hand to increase the power of a punch."
In the case of the smaller, karambit style, blade (possibly both depending on the specs of the straight blade), there is a good chance that the ring could be argued as a part of the handle and meant for a secure reverse grip, with the horn being where the thumb would rest.
Now, there are cases where knives have been used for prosecution, but they were WWI Doughboy trench knives where an entire set of knuckles is incorporated into the handle.

California Penal Code § 21810 PC makes it a crime to manufacture, import, sell, give, lend, or have possession of metal knuckles. This offense is a wobbler, meaning prosecutors can elect to file the charge as either a misdemeanor or a felony.
The language of the code section states:
21810. Except as provided in Chapter 1 (commencing with Section 17700) of Division 2 of Title 2, any person in this state who manufactures or causes to be manufactured, imports into the state, keeps for sale, or offers or exposes for sale, or who gives, lends, or possesses any metal knuckles is punishable by imprisonment in a county jail not exceeding one year or imprisonment pursuant to subdivision (h) of Section 1170.
