Narrow Tang Handles

The local woodworking shop has some laminated blades for sale, but I have yet to figure out a good way to slot/drill a hole for a handle and have it turn out halfway decent. How do you make a handle for a long narrow tang, like on these scandi-ground narrow tang knives?
 
Two pieces. Mill out the shape half as deep as the tang in each piece and epoxy together. Voila!
 
Use long drill bits and a drill press and just drill through the block. You can shape the holes a little with a rat tail file after if needed.
 
Another easier way is to use a spacer piece the thickness of the tang cut out on a scrollsaw to the shape of the tang. Thats how Oupa does it. Comes out looking really nice.

I'm not sure I understand how this works. How do you use the spacer piece to create the hole in a solid handle for the tang?
 
Does anyone have good luck using 5 minute epoxy or wood glue to secure the tang to the grip after it is finished for a more secure fit?

I think he is saying cut the spacer piece, then use two pieces on either side of that like a sandwich.
