Last time I was at the downtown TA truck stop they had a real knife shop. I've not been to that truck stop in about a year though, so I don't know if the knife shop is still there.
The best selection is a store called Nashville Gun and Knife (nashvillegunandknife.com) located in West Nashville. They carry a nice number of Benchmade, William Henry, Chris Reeve, Hinderer, ZT, Anza, ProTech, Southern Grind, and others. Prices are full retail.
A small outdoors store called LifeView Outdoors (lifeviewoutdoors.com) just south of downtown has a decent selection of Benchmade, ZT, ESEE, and a few other outdoor-oriented knives.
A few other gun and tactical stores carry mainly Benchmade knives. These include the Nashville Armory, Greene Military, and the Franklin Gun Shop.

Nashville Sporting Arms on Charlotte Pike is small but has a pretty good selection of knives. He carries the usual suspects Chris Reeve, Benchmade, Spyderco, etc, etc. Also saw a couple of Randalls in the case last time I was out there.
