Only the edge goes into the quenchant...which is what helps give it the crazy lines/coloring on the blade flats.

Makes for a tougher knife....when batoning, etc.

So the whole knife has been hardened and tempered but the edge has an extra quench for added tuffness?
 
Yes - there are Green Nessmuks left....2 I think.

Edge-quenched means just that...the whole knife is brought up to temp, but only the edge is quenched/hardened. The rest is left in a semi-annealed state (softer/tougher). This is very valuable considering the low-alloy steel 1095....if the knife was fully hardened....given this slenderness ratio (height compared to thickness)...the likelyhood of it breaking increases. So, leaving the back soft helps decrease that likelyhood. It will bend instead of break....absorbs impact better, and so on.
