Mulies are milder tasting than white tails around here. Moose is the closest to beef, Elk and Buffalo are super lean, kinda dry. Rabbits are pretty tough and gamey, I forget what porcupine is like, I only had it once several decades ago. I have never tried (non mammal
) beaver tail, but have been told that it is tender and pretty good. I've tried a lot of game meat, including prairie gophers etc. Some is pretty good, some I would prefer to eat the arse hole out of a skunk instead.
