Necker as a Primary Blade?

I made some a couple of weeks ago. Good stuff.

Mulies are milder tasting than white tails around here. Moose is the closest to beef, Elk and Buffalo are super lean, kinda dry. Rabbits are pretty tough and gamey, I forget what porcupine is like, I only had it once several decades ago. I have never tried (non mammal:D) beaver tail, but have been told that it is tender and pretty good. I've tried a lot of game meat, including prairie gophers etc. Some is pretty good, some I would prefer to eat the arse hole out of a skunk instead.
