Need a bit of guidance.

Had a piece of .060 O1 laying around so I decided to try a thin paring knife out of it. I HT it and tempered it to 59-60rc before grinding bevels. I have a couple brand new ceramic Blaze belts. My question is what should I take the edge to? Should I leave it .005-.010" or take it to a near zero and then finish it off on my stone? I've never worked with such thin stock or anything like a paring knife edge. Also I'm planning on starting with the brand new 120 grit Blaze instead of going with the 60. Is this the correct thinking? I know keeping it cool is extremely important.

I would start with the 60 and take it to .015" or so and then switch. I would leave the edge at .005-.010".
 
I don't make many paring knives but do make slipjoints,on a .060 blade I start with a 120 grit ceramic belt and leave a .005 edge before sharpening.
and yes keeping it cool is very important.
