I would look into the Buck Spitfire. Might want to try to find one to inspect in person, as there have been some qc issues, but Buck has one of the best warranties around, so they'll take care of any problems. I would also look into Kershaw Leek/Scallion; they have some really nice colors, though they're at the top of your price range.
 
Camillus "Hustle" at the big box mart store...non-assisted with AUS 8 steel. Smoothest opening knife I own, holds an edge great and, if I'm not mistaken, the scales can be colored about any way you want. Did I mention cheap? I mean inexpensive. Mine's a user and a keeper!
 
What about a GEC #25 EO in Red Micarta. It's a great knife for the ladies, because it is an easy open, sharp, and will not scuff their nails. Also, it's very easy to carry in their purse or pocket. That knife comes in sheepsfoot and IMO, that's best for most duties. It scores well, cuts tape well, easy to control, and just an easy to use blade shape. Moreover, she'll develop her own patina and it will make it her's the more she uses it.
 
fwiw: I bought two Ka-Bar Doziers a while back when they introduced the Drab Green and Coyote Tan versions with thumb studs. I've already gifted one away but they are great little knives. Cheap and a good EDC in that they are thin (No metal Liners), light weight, and a decent size edc blade ( 3inches). If you're looking for something that she can play with sitting on the couch like most men do flicking open blades and what not they are not good for that. The two I received from two different suppliers on amazon were fairly tight out of the box. I've heard they loosen over time but in my experience not enough to thumb or wrist flick open. For a useful solid EDC they are good to go though. For what they cost shipped it's a good one. Also, the texture is grabby in my pockets, prolly not an issue if it's going to go in a purse or the like. I wear a lot of Dickies work pants for my job and did get a little fray/ whatever you call that pocket fuzz after a few weeks.
 
I can't believe no one has mentioned an Ontario Rat 2 in Pink. It's the smoothest budget knife out there IMO and will swing open fast with just a thumb flick. No dedicated wrist action necessary. You can find them under $30. A liner lock will always be smoother and easier to open than a lock-back. Its just physics. Look up videos on this knife and its big brother the Rat 1. You will see what I mean.
