...I use the knife to scrape and the edge degrades very quickly. I thought that this might be one option for the quick, easy, on-the-go type of thing. I hadn't considered the cleaning, tho steel shouldn't be a problem I would guess.
When I mentioned "hard to clean" I was thinking about a pull-thru V type with ceramic rods. You're right, steel or tungsten carbide blades in such a sharpener shouldn't be a problem to clean. Since this type sharpener scrapes a new edge into place, it sounds like it would be ideal for your purpose. One good scrape deserves another.
