I'm looking for a knife with some very particular traits, and I was hoping y'all could point me in the right direction.

I've been looking everywhere for a 5" drop point blade, either flat grind or full convex. I have two knives that each possess some of the desired traits.
My Fallkniven F1 is almost exactly what I'm looking for -- drop point, full convex, great steel, nice and light -- I just wish it was a little bigger. I've looked at the S1, but I just can't get past the modified clip point.
My ESEE 6 is another favorite -- drop point, full flat grind, but quite heavy at ~12 ounces, and about an inch and a half longer than what I'm looking for.

Does anyone know of a good 5" drop point, preferably stainless, in either flat or convex, for under $200?

Take a look at the Bark River Bush Seax (full-sized version, not the smaller Bantam). Here are the Specs:

Overall Length: 10.125
Blade Length: 4.75
A2 Tool Steel at 58-59 HRC
Blade Thickness: .187
Weight: 10 ounces
Full exposed tang, contoured handle
Ambidextrous leather sheath with firesteel loop

And it's almost fully flat ground, and the Micarta versions run in the $200 neighborhood, so it might work for you.

The Cold Steel Master Hunter, which Fallkniven copied, is a little bigger. It has a 4.5" blade and a 4.75" handle. It now comes in 3V and is $97.71. While it is not stainless it has a DLC coating that will take the abuse. The whole knife is simply a powerhouse yet is small enough to be useful.
