How about using Tuf-Cloth on an Izula? Like CWL said too, the Salt line from Spyerco, or there is an interceptor from Tops if you like that brand. I had a sheath made by Rivercity sheaths once, and it rocked! Hmm, ESEE 3 is on my list too, ooh, and someone was talking about an ESEE 6 in stainless the other day, so maybe the others will be offered in stainless? it may be worth checking into.
The only other think like I have done is go to Knife Center and set it to search fixed blades, then just set your size limit in the back of your head and check out all the specs, I like that site, because of all the diversity and search functions.
Edit: the new ESEE blades I see on their site show that a couple of them are uncoated. I also just read this while I was on the ESEE site:
