I have 3 knives in my kitchen that I made for my wife back in the 70s with Ebony handle material and none of them has shrunk more than a thousandth or two in over 40 years. You're pretty safe with any resinous hardwood. Plus you'd play Billy Hell trying to force the acrylic into any resinous hardwood.
