Watched the first 2 jig videos only and thus might miss something.
Here's my 2 cents.
He holds the grinder much longer at the plunge line. No idea why but looking at your blade I now know though still not what mechanism is at work there? Would the belt simply be slower there and thus needs more time?
Also he pulls it straight even when approaching the belly and through the tip which causes a steeper angle in that area compares to the straight part of the edge, just like in your example. I guess there's no other way with keeping the bubble centered the whole time. Some might like it though to keep the tip stronger.
