Need help with pid build

I have an old Paragon oven that is 16 amps, 1920 watts and 120 volts, I want to convert this to pid control and really am in the dark as to what I really need. I guess I need a ramp and soak pid? What else would I need? Do I take the old dial controller out and wire this to the existing wires or wire it separate and only install the new thermocouple? Would I install the thermocouple in the bottom of the oven near where the knives will be? The existing thermocouple is in the top of the oven. Any help or advice is greatly appreciated.
