Need new kitchen knives

Welcome to the forums Texas Zeke. That is also my favourite knife. It is nice and light with good weight to it. Slices real nice.

I really love my global knives. The only problem is that I have to do the cooking because my wife is too afraid of how sharp they are !
 
Seems like a good place to mention that http://www.worldknives.com/ has a couple Hattori damascus Santukos in stock at the moment (he ordered some extras when I special ordered one).

These get mentioned on the forums periodically, but AFAIK this is the first time you've been able to get them directly from someone in the US. His price is a good bit lower than I was expecting based on foreign vendors, too.

Since I'm still at work, I haven't even pulled the knife out of its box, only peeked in to admire it. But, all reports on their performance are good. Look for a report from me in Reviews in a couple days.
 
Go with Wustof Trident's Culinar! its all about style... and they work hella good too...

I have used a lot of different kitchen knives both cheap and expensive but none beat the ones I purchased last year from Murray Carter. Sharper than blazes, hold an edge forever and a great value. Where else can you get a knife from a mastersmith for $50-100

Another vote for Fallkniven. I bought my wife a White Whale K2, which I keep shave sharp for her with my Sharpmaker. The VG-10 is quite good in the kitchen.
 
Hmmmmm, No one has mentioned the Messermiester Brand, from Germany. Know several professionals, in the culinary arts, that prefer these knives above all others.

I gotta go with Gary. I have a decent set of Professional S and some customs, but my Carters are my favorites.
 
Forschner. You can pay more for others, but you will be hard pressed to get better quality without paying a lot more.

Agree with Paul that the Victorinox/Forschners are the best bang for the buck. Lots of professional chefs and cooks have some Forschners lying around (especially the paring knives). If you lose them (theft can occur in kitchens) or break them you won't feel the pinch so much. The Forschners also usually come in top 3 overall in most knife reviews and for stamped blades, Forschners come in right at the top (most of the time).
