Steel type is a much guarded secret amongst Norwegian knifemakers and knife companies - or so I've been told. Most just say "carbon" or "stainless". Their carbon is of great quality though. Maybe that's why they're so bent on keeping it a secret...
 
If you like the feel of that Mora I would recommend something of similar design. Ragweed Forge was already mentioned as well as Bark River Knives.

Both are good but I favor the Bark River Knives.

It's not possible to beat the performance to cost ratio of a Mora knife!

The stainless steel Moras are also very good. I keep a stainless Mora in my kit for cooking chores. I do not use my game or bushcraft knives for cooking.

Though somewhat 'pedestrian', I'd have to concur with Trout Tamer on the CS Master Hunter. The Carbon V takes an edge that's truly scary and makes for a great skinner and/or general purpose knife. It's attributes are price, edge and light weight. It's downside is the extra care when exposed to wet environments.
 
I haven't seen one yet in person, but the Bark River knives previously mentioned look pretty nice. In addition, you might want to check out Gene Ingram's web page. Again, I've never seen one of these knives in person, but they look like great knives at a great price.
