Need recommendation for high end Japanese kitchen knife store San Francisco Bay Area

Please tell me where I can look and feel higher end Japanese kitchen knives.
My budget is large $1,000ish is fine.
Looking to upgrade my Santoku.
I currently have a Fujiwara, this one: https://www.teruyasu.net/products/japanese_knife_santoku_maboroshi.html

I don't have much experience with the higher end Japanese Kitchen knives, so I would like to feel them in my hand before spending the big bucks.

So, that being said, any recommendations of what stores I could go to?
Maybe in Japan town? or elsewhere in the SF Bay area?
