Need Some Advice

Thanks for the recommendations guys. The Hen and Rooster looks good. I like the BK7 but like I said, I'm worried about taking 1095 (and other non-stainless) knives into marine environments for extended periods.
Something I would like to add, is that you BK-7 would be fine EVEN around marine water. All that you need to do is coat it with mineral oil every day or so (if your knife is heavily used).
 
I second the recommendation for a Fallkniven blade. I have an F1, which is a bit smaller than you wanted. But an A1, or S1, should be perfect for you. They have excellent stainless steel, are full tang, great handles, may get them with kydex sheaths. They are excellent knives for the bush.

Yeah they look amazing, I definitely want to pick up an A1 (and probably an F1 as well) at some point, although I may have to settle for something cheaper for this trip depending on how much my other gear costs. They cost upwards of $250 where I live.
 
The Fallknivens are well worth the money. I love mine. Mine has the leather sheath. But for your needs the kydex would be the way to go.
