Need some feedback please

You would do well to go with Joe's recommendation or perhaps a Chris Reeve all though they aren't much for looking at in my opinion, but they are great using knives for me. For looks though you could get a folding Kalinga pro from Buck knives. You could get both the fixed and the folder for well within your budget that have very graceful lines and nicely built in my opinion. One for use and one for gawking at.
 
Price range...gee, probably something $600-$800 tops.

Anyways, knives to men can be like jewelry to women - a matter of personal taste aside from the price tag. If my wife were going to drop that much money on a knife for me, I would prefer that she gave me a $5 piece of crap knife to represent my present and then give me a handmade "gift certificate" for the amount that I was free to spend. Half the fun of getting a nice knife is researching and shopping for just the right one.
 
If he's got a Rambo knife on display, then I'd suggest that you probably don't need to spend a whole lot of money. Instead, I'd recommend that you commission a knifemaker to make him a knife inspired by the latest Rambo knife. Just a thought.

Take a picture of some of his knives if you don't know the names, then post it so we can get a better idea of what he likes.
But if it were me I would be pretty pleased to get a Busse hell razor or a Fallkniven njord.
