Hello, I'm going to make a wine cork handled cheese knife for my parents as a gift. I have the profile drawn out and traced onto my metal but I'm not sure how to grind the bevel. Do I grind with the belt perpendicular to my handle or perpendicular to the future sharp edge? The pictures of my profile are at the link below.
