New blades

So, I've been modding existing fixed blades (filework and scales) for a while now and it's time for a scratch built project. I have a tendency to make the first bite a big one in whatever I do, so this is no exception. I couldn't think of any place I'd rather get advice, so here goes...

I am doing a set of steak knives and, depending on how I nest the steel, maybe a fillet or mora blade as well. I have an old toolbox saw for the steel (it's a old Sandvik handsaw). I'm using beef femur for the handles with hidden pins. The profiles of both the blanks and finished product are below. I should also say that I've always preferred plain-edged steak knives and please ignore the pin placement.

I boiled the bones to make sure that the soft tissue was broken down, then hung them in a tree figuring that maggots would pick them clean. I have a dog so I can't really leave them on the ground or bury them for ants and beetles. They're doing the job, but not as quickly as I'd like. These aren't needed till Xmas though, so I'm not too stressed...
