It might be an option....but I'd be more likely to use a Sandvik stainless like 12C27 or 13C26. That would be the cat's meow...a Scandinavian steel with a Scandinavian grind.
It's fairly easy to sharpen and has a very high degree of stain-resistance (think 440 series). But with more carbon, finer grain and Sandvik's very impressive foundry skills behind it.
