We've now got more scale options available for our new 8" chef's knife and 7" santoku! We've added green and red g10 as well as pacific yew and maple woods. The shows we did in the last few weeks have diminished our stock significantly. We do have almost everything in stock but only limited quantities of certain blades. If you don't see it or it's listed "on back-order" just email or PM to find out when it will be ready to ship! If you need it for Christmas, order soon!

We do every step in building these knives ourselves, from milling and hand finishing the blades and heat treating, (including a sub zero quench) to harvesting the woods for our wooden handles! For more information on our knives or to purchase a knife, visit our webstore!

Alder 8" chef's knife:

The Alder is a classic german style 8" chef's knife. A nice wide blade and full handle make it very comfortable to use. It slices well yet has good backbone for demanding tasks like opening squash. The blade is made of cpm S35VN stainless, which takes a great edge and keeps it, without being difficult to sharpen.

Sitka 7" santoku:

The Sitka is our take on the popular Santoku. It features a thin blade and shallow edge angle to allow for precise slicing and chop cutting. This knife push cuts beautifully. On the G10 scales we hollow out the back to achieve good balance with the light blade. The CPM S35VN blade steel takes a razor edge at 18 degrees (inclusive) and holds it well.

I'm interested in buying a set of paring, chef, and santoku knives (all matching, either red or green handles, cnc finish)....but can't figure out how to change your website currency to USD.

You can't change our website's currency to USD. Add the knives you want to your cart and go to the checkout page. Enter your address to get a shipping estimate. From here you have two options for getting a value in USD before paying. The first is just plug your total value into a currency converter on google (quick but probably not totally accurate). The other option is to checkout with you paypal account, paypal will give you a converted value to USD before you pay. I hope that helps!

Got my sitka and trillium earlier this week, both are great additions to my knife block. The deep red is sexy
 
I debated on this long and hard. Looked at lots of other options. The materials and price make it very attractive. Watching all of their videos pushed me over the edge. Paid last night and it has already shipped. Can't wait!
