New guy, new hobby. In with both feet 15 WIPs

So I had this great idea to start making some knives for the guys I work with and instead of starting small and easy, I did what I normally do and went overboard. Robert Fisher pointed me in the direction of a great knife maker Larry Beverly who took some time out of his day to show me some technique and ways to fix what I had already messed up. I was also introduced to Tom Goodpasture who I sent 6 of the knives to, to have the primary bevels put on them. I've done 9 of them myself and they head off to heat treat Monday. I'll post a pic of the 9 I ground when I get back from a little trip I'm on. These were all stock removal with a 4.5" angle grinder, a hand-me-down Delta 4x36 and some hand files. All 1084 I got from Aldos. They are around 9.25" OAL. The thinner blades are 5/16 and the fat boys are 1/8( won't be making them that thin again, but probably won't make this style either). I'll be doing a mixture of handle types on these, resined jute, wood, and I've thought about some poly cutting board dyed and textured with a soldering iron like some guys do for their pistol grips. Let me know what you guys think.

So, yesterday I had some time and managed to get out there and grind the ones 9 that weren't ready for HT and although I got most of them close to .050, they are nowhere close to the .025 that Tom did on the other ones.
What do most of you prefer to take 1084 to thickness wise before HT? Will I have a bear of a time getting a final bevel or edge on the ones that are at .050? Right now these are at a 20 degree overall bevel, so for the final grind should I maintain that until the edges meet or get close and then sharpen the rest of the way?
