Sorry I was late to the welcome wagon UT but I see you've already met some of the fine folks here, we have some members that make some beautiful chef's knives.

Looking forward to reading your posts, any chance we can get a peek at that knife roll of chef's knives? ;)
 
Opinels seem to beg to be modified, I just never got around to doing so myself as I don't like carrying them for some reason. But I sure do love putting them to work on cardboard duty, they make great little box cutters :thumbup:.

If you are happy with good quality cheap knives look at Rough Riders, and than Colt slip joints (their slip joints come out of the same factory to my understanding). They will set you back $5-15 and are well worth the money. The 440a has a good heat treat and is quite serviceable so don't let the steel snobs get to you over in general and lead you to believe 440a is garbage (a lot of companies do a less than stellar job on 440a which gives it a bad rep). This is a good way to test out knife patterns without spending a large amount of money on the higher end brands and still have something that is worthy of some pocket time.
 
I'm a working restaurant owner, not a master chef or even a sous chef. So my knife roll is scuffed, torn, and rumpled. I use my 8" Wusthof Chefs Knife and a Wusthof hawksbill paring knife 75% of the time, and a cheap Cold Steel 5" serrated utility knife the rest of the time. Honestly, the Cold Steel Kitchen Series is hard to beat for affordable use in the kitchen.

When I want to treat myself, I'm ordering a set of Shun knives.
 
Strangely, I happily use a $200 Spyderco to cut boxes, so I don't scuff my $15 Opinel.

What the heck is that all about?!?
