New Kitchen Knife

It's always nice to see a knife that's so fit for it's intended fuction.
When the piece is also so beautiful, well then that's a great thing!
 
Tremendous kitchen knife, Burt! The CF handle, intregal design and damascus make this one a kitchen standout. :thumbup:

I was just telling a customer how much I've always wanted to do a damascus and carbon fiber knife. Damn you Burt Foster!!! ;) :D
 
As promised, here is my trio of Burt Foster kitchen knives.

My photography skills are seriously lacking but this should give a good idea. The slight pink tint is a reflection.

The Santoku has been in regular use for over 2.5 years. The carbon migration line in the laminated interface has turned a really nice golden color.
The cleaver has been kind of repurposed into kitchen use but it's great for cracking open a squash or other hard objects that you'd hesitate to take a thinner blade to.
The new damascus slicer was used the day it came (yesterday) and I can see that the damascus will change over time. I'll be interested to see how the "patina" on a working damascus knife develops. The carbon fiber handle remains slightly grippy when wet which is an added bonus.
These knives sit happily alongside my two Kramers as well as a few others and hold their own perfectly well.
