It is this kind of post that informs me and keeps me involved with BladeForums. Me? An AVID knife aficionado who basically knows nothing about the process but am compelled to the finished product and always interested to learn.

Bob has an on-line auction right now for those on his e-mail list for one of the 10 inch Meiji Chef's knives that was featured on the show with Bourdain.

Still almost 24 hours left and that $8000 will buy you . . . just about a third of this knife. :eek: So far.

Bob Kramer deserves all the respect. Even his zwilling version of chefs knife is amazing. BTW at his auction that knife from Bourdain piece is at $25K at the moment.

It's the transformation of steel/iron from alpha to gamma phase states, also known as decalescence (or recalescence, depending upon whether or not the steel is cooling or heating up:

Definition of DECALESCENCE. : the decrease in temperature when the rate of heat absorption during transformation exceeds the rate of heat input while heating metal through a transformation range — compare recalescence.
 
BTW, Mareko Maumasi worked with Bob Kramer, and if you want a cooking knife that is equally as interesting, but quite a bit less costly, it's a good time to get in on the action:

My thoughts on the video:

I really like it, and I believe it adequately portrays Bob's genuine passion for his work.

Bob has helped bring an awesome awareness to the craft of bladesmithing and custom made knives. Helping it to be seen, not only as a means of high quality manufacturing and art, but also as a path to self sufficiency and creative self expression. The ability to pursue this trade as a viable source of income and career has changed the lives of so many. I applaud him for all he has accomplished as well eagerly look forward to seeing where his path continues to take him.

Bob has helped elevate this craft as to be seen on a level with fine art. I'm sure even the founders of the ABS are nothing short of proud. As STeven stated, the man has been at this work for over 20 years, practicing and constantly reaching for unattainable perfection. Building and creating some of the finest and most highly sought after culinary knives available in the world. I think he embodies the ideal of keeping your head down and doing your work to the absolute best of you ability. He's maintaining a constant curiosity and willingness to learn and pay attention to his craft, as it's continuously offers to teach lessons and skills. He has worked incredibly hard and it has gotten him to incredible places. He is a good man with a wonderful story, he's clearly talented and creative, but beyond all that he's doing honorable work and helping to reinvigorate a tradition, that I know many, as well as myself, feel fortunate and proud to be a part of.

I've been fortunate to have had the opportunity to learn and work beside him for three years, and I continue to be inspired by him and his work. He serves as a living reminder of where discovering and following your passionate pursuit can take you.

Coop, I've not read the entire thread though am familiar with the phenomenon, so my comments could have already been addressed, but..........

I've always assumed that these hi-end Kramers were being acquired by celebs and hi-end chef types, rather than by the people we all know and consider knife collectors. Would like your views.

Bob: I completely agree.

And that's a striking point: He's broken through a shell.

I'm unaware of his past knives including engraving. Meteorite is another exotic touch.

We've experienced this for decades, with enhancements. The 'outside' world is now being sold on it. :)
