I like the Carbon Steels just seems they get overlooked for the Newer Stainless Steels...Just my opinion but a well heat treated high carbon steel will work circles around most stainless. I do like some of the newer stainless like Elmax for sure but I do a lot of business with CPM154 and AEB-L they are easy to grind post heat treat. When asked about high carbon steels I like to demonstrate the quality of the edge of 52100 and W2 against CPM154 which is a well known stainless then I will bring out a Busse in SR101(52100 with Busse heat treat Killer quality edge performance) and show how well the 52100 and W2 stack up. Many people are surprised how well high carbon performs although it sacrifices corrosion resistance.
