If I could do it again from the start, I would maintain a spreadsheet with dates, prices, description and include a picture of every knife I ever own. It would be cool as hell to see how my tastes in knives has developed and changed over the years. I probably can't remember 1/4 of the knives I have lost, sold, or gifted.

Thank you. I don't have many (yet) but I'm gonna start cataloging them all too.
