How thick would the liner be??
Would like the same overall thickness.
I was wondering, what steel would be best, as many custom knives in my price range are usually carbon steel, which can impart a funky taste to food.
I guess S30V would have no such problem, particularly, if you wash it soon after handling food with it?
I wonder, does 2.5" give you enough blade length, to slice an apple in half? I wonder if just a little more length in the blade is needed, to do more then peeling fruit?

Yep, make one in orange G10 with a kydex sheath and I'll buy it ASAP.
gundy - I initially wanted to use just lanyard tubes...but was concerned about food particles getting stuck inside them...and also I wanted the handles to have a mechanical fastener (corby pins). Maybe I can add a lanyard at the back on the next batch? (like the bushcraft)

Yes, S30V is ideal. I am also considering doing them in CPM154 - easier to sharpen.
You can reach the core, but cannot halve an apple at once. As a dedicated paring knife...I need the length to be short enough to be highly manuerable. Plus 2.5" of blade makes it nearly 50-state legal for carry.

All of the blanks pictured in this thread are spoken for....but the next batch will be in CPM154 and will have G10 on them - orange, black and red. :thumbup:
