Oh, one quick question on the machining operation. I gather that once a blank is loaded into the machine, witht he speeds involved the machining of the bevels goes a bit quick?

Yeah it goes reasonably quick...about as quick as machine flat grinding goes, which is done on most production and semi-production knives. It takes a few passes.

Fly cutting offers higher precision however, so when we want to mill the upper bevel a little thinner than the bottom, so your upper cutting edge would be a better slicer, and the bottom cutting edge a better chopper, it's a highly accurate production operation.
