The two new board knives we've been working on are now available! The Alder 8" german style chef's knife and the Sitka 7" santoku are replacing our Salal chef's knife. Currently we have black G10 scales for them, but will also be offering both with neon green or dark red g10, as well pacific yew or western maple wood. At the moment we've got satin and CNC blade finishes for both models.

We do every step in building these knives ourselves, from heat treating, (including a sub zero quench) to harvesting the woods for our wooden handles! For more information on our knives or to purchase a knife, visit our website.

Alder 8" chef's knife:

The Alder is a classic german style 8" chef's knife. A nice wide blade and full handle make it very comfortable to use. It slices well yet has good backbone for demanding tasks like opening squash. The blade is made from Crucible's cpm S35VN stainless, which takes a great edge and keeps it, without being difficult to sharpen.

Sitka 7" santoku:

The Sitka is our take on the popular Santoku. It features a thin blade and shallow edge angle to allow for precise slicing and chop cutting. This knife push cuts beautifully. We've hollowed out part of the g10 scales to achieve good balance with the light blade. The CPM S35VN blade steel takes a razor edge at 18 degrees (inclusive) and holds it well.
