I've moved away from waterstones but shapton 1k& 4k was my last purchase. I am getting great results with DMT xc through EEF , and spyderco ceramics. IMO the medium ceramic benchstone is an excellent value, and for touchups I go to the UF regular side then my lapped side, if more work is needed I go to medium ceramic. If the medium ceramic wont fix it then i go to the diamonds.
 
Just spent about $800 on Shapton stones and gear to add to our sharpening
business. Spent today sharpening salon shears for a spa in Warwick, RI.
The stones are worth every penny. Start honing on a 1000 grit, along to
4000, 8000, and 16,000. Shears were razor sharp, polished and smooth.
The stylists were happy as could be.

Shaptons are spendy, but superb.

I don't seem to go beyond this stone much (Norton Crystolon combi), at least not for v bevel knives. Although I do have a 1000 grit JWS and a new 3000 chosera that I am looking forward to using.
